An exceptional wine from Chateau Simian, which demonstrates both maturity & freshness. Particularly appealing is the purity of the Roussane grape (30%), which brings a lot of savoriness & clarity.

55% Grenache Blanc

30% Roussane

15% Clairette

Winemaking
Hand picking and manual sorting. Destemming. Adding natural yeasts for fermentation during 10 to 12 days in a vat for 70% of the blend and vinifying and aging in barrels for Roussanne. Then, aged in the same containers for 6 months before bottling.

Tasting notes
With a delicate straw robe, this blend expresses with great elegance & nice intensity its floral aromas, white fruit & citrus zest. Linden, jasmine, fennel, pear, medlar, mirabelle plum, white peach, underlined by a subtle & fresh minerality and a note of white pepper and toasted almond.  

On the palate, it has a great elegance, round, fleshy, followed by a pleasant freshness for a full & persistent finish, which underlines the floral & white fruit notes.

Ideal with scallops with saffron, white meat with truffles.
